Fennel is a culinary plant native to the Mediterranean from which the heart (bulb), leaves and dried seeds are used to season fish and sauces.
It is a perennial plant that can reach a height of 2 metres and has leaves divided into thread-like segments. The flowers appear in yellow, aromatic umbels. They flower in summer.
The soil it likes is one with a lot of humus, mineral salts and manure. They do not tolerate acid soil.
It likes full sun and not excessively cold temperatures.
It should be watered abundantly in summer and a little less the rest of the year.
The bulb can be harvested for consumption when it is just over 10 cm wide.
Fennel is a plant that is resistant to the usual pests and diseases and does not require special care.
It is propagated from seeds sown in autumn or winter.
